Ingredients
- 1 box (14.1 ounces) refrigerated pie crusts
- 1 cup granulated sugar
- 1/2 cup butter, softened
- 1/4 cup lemon juice
- 2 large eggs
- 1 teaspoon vanilla extract
- 1/2 cup semi-sweet chocolate chips, melted
- Assorted fresh berries for garnish
Instructions
- Preheat your oven to 375°F (190°C).
- Unroll pie crusts and cut out small circles using a cookie cutter.
- Press circles into mini tart pans.
- In a bowl, cream together sugar and butter.
- Beat in lemon juice, eggs, and vanilla.
- Pour lemon mixture into half of the tart shells.
- Bake for 12-15 minutes, or until golden brown.
- Drizzle melted chocolate over the remaining tarts.
- Garnish all tarts with fresh berries.
- Let cool completely before serving.
