Ingredients

  • 1 box (14.1 ounces) refrigerated pie crusts
  • 1 cup granulated sugar
  • 1/2 cup butter, softened
  • 1/4 cup lemon juice
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1/2 cup semi-sweet chocolate chips, melted
  • Assorted fresh berries for garnish


Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Unroll pie crusts and cut out small circles using a cookie cutter.
  3. Press circles into mini tart pans.
  4. In a bowl, cream together sugar and butter.
  5. Beat in lemon juice, eggs, and vanilla.
  6. Pour lemon mixture into half of the tart shells.
  7. Bake for 12-15 minutes, or until golden brown.
  8. Drizzle melted chocolate over the remaining tarts.
  9. Garnish all tarts with fresh berries.
  10. Let cool completely before serving.
