Description
This Marry Me Tuscan Chicken Soup is a creamy, flavorful soup that’s perfect for a comforting meal during the cold season.
Ingredients
- 1 tablespoon olive oil
- 1 pound boneless, skinless chicken breasts, cut into bite-sized pieces
- 1 teaspoon Italian seasoning
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1 onion, chopped
- 2 cloves garlic, minced
- 4 cups chicken broth
- 1 (14.5 ounce) can diced tomatoes, undrained
- 1 cup heavy cream
- 1/2 cup grated Parmesan cheese
- 1/2 cup chopped fresh spinach
- 1/4 cup sun-dried tomatoes, oil-packed, drained and chopped
Instructions
- Heat olive oil in a large pot or Dutch oven over medium heat.
- Add chicken and season with Italian seasoning, salt, and pepper. Cook until browned and cooked through. Remove chicken from pot and set aside.
- Add onion and garlic to the pot and cook until softened, about 5 minutes.
- Pour in chicken broth and diced tomatoes. Bring to a simmer.
- Stir in heavy cream, Parmesan cheese, spinach, and sun-dried tomatoes.
- Return chicken to the pot. Heat through.
- Serve hot.
Notes
- For a thicker soup, add a slurry of cornstarch and water (1 tablespoon cornstarch mixed with 2 tablespoons cold water) to the soup while simmering.
- You can use rotisserie chicken instead of cooking the chicken yourself.
- Adjust the amount of red pepper flakes to your liking.
