Description

This Marry Me Tuscan Chicken Soup is a creamy, flavorful soup that’s perfect for a comforting meal during the cold season.


Ingredients

  • 1 tablespoon olive oil
  • 1 pound boneless, skinless chicken breasts, cut into bite-sized pieces
  • 1 teaspoon Italian seasoning
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 4 cups chicken broth
  • 1 (14.5 ounce) can diced tomatoes, undrained
  • 1 cup heavy cream
  • 1/2 cup grated Parmesan cheese
  • 1/2 cup chopped fresh spinach
  • 1/4 cup sun-dried tomatoes, oil-packed, drained and chopped


Instructions

  1. Heat olive oil in a large pot or Dutch oven over medium heat.
  2. Add chicken and season with Italian seasoning, salt, and pepper. Cook until browned and cooked through. Remove chicken from pot and set aside.
  3. Add onion and garlic to the pot and cook until softened, about 5 minutes.
  4. Pour in chicken broth and diced tomatoes. Bring to a simmer.
  5. Stir in heavy cream, Parmesan cheese, spinach, and sun-dried tomatoes.
  6. Return chicken to the pot. Heat through.
  7. Serve hot.

Notes

  • For a thicker soup, add a slurry of cornstarch and water (1 tablespoon cornstarch mixed with 2 tablespoons cold water) to the soup while simmering.
  • You can use rotisserie chicken instead of cooking the chicken yourself.
  • Adjust the amount of red pepper flakes to your liking.
