Description
High-protein pancake sausage mini muffins are a quick and easy breakfast or snack. Prepare them ahead of time for an on-the-go option.
Ingredients
- 1 cup pancake mix
- 1 cup milk
- 1/2 cup cooked breakfast sausage, crumbled
- 1/4 cup shredded cheddar cheese
- 1 teaspoon maple syrup
Instructions
- Preheat oven to 350°F (175°C).
- In a bowl, combine pancake mix, milk, cooked sausage, cheddar cheese, and maple syrup.
- Mix until just combined.
- Grease a mini muffin tin.
- Fill each muffin cup about 3/4 full.
- Bake for 15-20 minutes, or until golden brown and a toothpick inserted into the center comes out clean.
- Let cool slightly before serving.
Notes
- You can use any type of cooked sausage you like.
