Description

This is a simple and healthy cabbage soup recipe. It’s easy to make and packed with vegetables.


Ingredients

  • 1 tablespoon olive oil
  • 1 onion, chopped
  • 2 carrots, chopped
  • 2 celery stalks, chopped
  • 4 cloves garlic, minced
  • 1 head of cabbage, shredded
  • 8 cups vegetable broth
  • 1 (14.5 ounce) can diced tomatoes, undrained
  • 1 teaspoon dried oregano
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • Optional: Fresh parsley, chopped, for garnish


Instructions

  1. Heat olive oil in a large pot over medium heat.
  2. Add onion, carrots, and celery and cook until softened, about 5 minutes.
  3. Add garlic and cook for 1 minute more.
  4. Stir in cabbage, vegetable broth, diced tomatoes, oregano, salt, and pepper.
  5. Bring to a boil, then reduce heat and simmer for 15-20 minutes, or until cabbage is tender.
  6. Garnish with fresh parsley, if desired.
  7. Serve hot.

Notes

  • You can add other vegetables to the soup, such as potatoes, zucchini, or bell peppers.
  • For a heartier soup, add cooked chicken or sausage.
  • The soup can be stored in the refrigerator for up to 3 days.
