Description
This is a simple and healthy cabbage soup recipe. It’s easy to make and packed with vegetables.
Ingredients
- 1 tablespoon olive oil
- 1 onion, chopped
- 2 carrots, chopped
- 2 celery stalks, chopped
- 4 cloves garlic, minced
- 1 head of cabbage, shredded
- 8 cups vegetable broth
- 1 (14.5 ounce) can diced tomatoes, undrained
- 1 teaspoon dried oregano
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- Optional: Fresh parsley, chopped, for garnish
Instructions
- Heat olive oil in a large pot over medium heat.
- Add onion, carrots, and celery and cook until softened, about 5 minutes.
- Add garlic and cook for 1 minute more.
- Stir in cabbage, vegetable broth, diced tomatoes, oregano, salt, and pepper.
- Bring to a boil, then reduce heat and simmer for 15-20 minutes, or until cabbage is tender.
- Garnish with fresh parsley, if desired.
- Serve hot.
Notes
- You can add other vegetables to the soup, such as potatoes, zucchini, or bell peppers.
- For a heartier soup, add cooked chicken or sausage.
- The soup can be stored in the refrigerator for up to 3 days.
