Description
This White Bean Pesto Bake is a simple and healthy vegetarian meal. You can quickly prepare this easy casserole for a light and flavorful dinner.
Ingredients
- 1 tablespoon olive oil
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 (28 ounce) can crushed tomatoes
- 1 (15 ounce) can cannellini beans, drained and rinsed
- 1/2 cup pesto
- 1/4 cup breadcrumbs
- Salt and pepper to taste
Instructions
- Preheat oven to 375°F (190°C).
- Heat olive oil in a large skillet over medium heat. Add onion and cook until softened, about 5 minutes. Add garlic and cook for 1 minute more.
- Stir in crushed tomatoes and cannellini beans. Season with salt and pepper to taste. Bring to a simmer and cook for 10 minutes.
- Stir in pesto.
- Pour mixture into a baking dish. Top with breadcrumbs.
- Bake for 20 minutes, or until golden brown and bubbly.
- Let cool slightly before serving.

- You can use any type of white bean for this recipe.
- For a richer flavor, use homemade pesto.
