Description

A hearty and healthy turkey vegetable soup perfect for weight loss. This easy soup recipe is packed with flavor and nutrients.


Ingredients

  • 1 pound ground turkey
  • 1 tablespoon olive oil
  • 1 medium onion, chopped
  • 2 carrots, chopped
  • 2 celery stalks, chopped
  • 2 cloves garlic, minced
  • 6 cups chicken broth
  • 1 (14.5 ounce) can diced tomatoes, undrained
  • 1 teaspoon dried Italian seasoning
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 cup chopped zucchini
  • 1 cup chopped spinach


Instructions

  1. In a large pot or Dutch oven, cook the ground turkey over medium heat until browned. Drain off any excess fat.
  2. Add the olive oil, onion, carrots, and celery to the pot. Cook until softened, about 5-7 minutes.
  3. Stir in the garlic and cook for 1 minute more until fragrant.
  4. Pour in the chicken broth and diced tomatoes. Add the Italian seasoning, salt, and pepper. Bring to a boil.
  5. Reduce heat and simmer for 15 minutes.
  6. Add the zucchini and cook for another 5 minutes, or until tender.
  7. Stir in the spinach and cook until wilted, about 2 minutes.
  8. Serve hot.

Notes

  • For a thicker soup, you can mash some of the vegetables against the side of the pot.
  • Feel free to add other vegetables like green beans, corn, or peas.
