A hearty and healthy turkey vegetable soup perfect for weight loss. This easy soup recipe is packed with flavor and nutrients.
Ingredients
- 1 pound ground turkey
- 1 tablespoon olive oil
- 1 medium onion, chopped
- 2 carrots, chopped
- 2 celery stalks, chopped
- 2 cloves garlic, minced
- 6 cups chicken broth
- 1 (14.5 ounce) can diced tomatoes, undrained
- 1 teaspoon dried Italian seasoning
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1 cup chopped zucchini
- 1 cup chopped spinach
Instructions
- In a large pot or Dutch oven, cook the ground turkey over medium heat until browned. Drain off any excess fat.
- Add the olive oil, onion, carrots, and celery to the pot. Cook until softened, about 5-7 minutes.
- Stir in the garlic and cook for 1 minute more until fragrant.
- Pour in the chicken broth and diced tomatoes. Add the Italian seasoning, salt, and pepper. Bring to a boil.
- Reduce heat and simmer for 15 minutes.
- Add the zucchini and cook for another 5 minutes, or until tender.
- Stir in the spinach and cook until wilted, about 2 minutes.
- Serve hot.
Notes
- For a thicker soup, you can mash some of the vegetables against the side of the pot.
- Feel free to add other vegetables like green beans, corn, or peas.
