Ingredients

  • 1 tablespoon olive oil
  • 1 onion, chopped
  • 2 carrots, chopped
  • 2 celery stalks, chopped
  • 4 cloves garlic, minced
  • 8 cups vegetable broth
  • 1 (14.5 ounce) can diced tomatoes, undrained
  • 1 cup green beans, trimmed
  • 1 cup corn kernels
  • 1 cup peas
  • 1 teaspoon dried oregano
  • 1/2 teaspoon dried thyme
  • Salt and pepper to taste
  • Fresh parsley, chopped (for garnish)


Instructions

  1. Heat olive oil in a large pot over medium heat. Add onion, carrots, and celery. Cook until softened, about 5 minutes.
  2. Add garlic and cook for 1 minute more.
  3. Pour in vegetable broth and diced tomatoes. Bring to a boil.
  4. Add green beans, corn, peas, oregano, and thyme. Reduce heat and simmer for 15 minutes.
  5. Season with salt and pepper to taste.
  6. Garnish with fresh parsley before serving.

Notes

  • Adjust the vegetables to your liking.
  • Add a bay leaf for extra flavor. Remove before serving.
