Ingredients

  • 1.5 lbs boneless, skinless chicken thighs, cut into 1-inch pieces
  • 2 tbsp olive oil
  • 4 cloves garlic, minced
  • 1 tbsp ginger, grated
  • 2 tsp turmeric powder
  • 1 tsp cumin powder
  • 1 tsp coriander powder
  • 1/2 tsp red pepper flakes
  • 1/4 tsp salt
  • 1/4 tsp black pepper
  • 1/4 cup chopped cilantro, for garnish


Instructions

  1. Preheat oven to 400°F (200°C).
  2. In a large bowl, combine chicken, olive oil, garlic, ginger, turmeric, cumin, coriander, red pepper flakes, salt, and pepper. Mix well to coat the chicken evenly.
  3. Spread the chicken in a single layer on a baking sheet.
  4. Bake for 20-25 minutes, or until the chicken is cooked through and the juices run clear.
  5. Garnish with chopped cilantro before serving.
