Ingredients
- 1 pound turkey sausage, cut into 1-inch pieces
- 1.5 pounds Brussels sprouts, trimmed and halved
- 1/4 cup olive oil
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1/2 cup cranberry sauce
- 2 tablespoons balsamic vinegar
Instructions
- Preheat your oven to 400°F (200°C).
- In a large bowl, toss the Brussels sprouts with olive oil, salt, and pepper.
- Spread the Brussels sprouts in a single layer on a large baking sheet.
- Add the turkey sausage pieces to the same baking sheet, distributing them evenly among the Brussels sprouts.
- Roast for 20 minutes.
- While the sausage and sprouts are roasting, whisk together the cranberry sauce and balsamic vinegar in a small bowl.
- Remove the baking sheet from the oven. Drizzle the cranberry glaze over the sausage and Brussels sprouts.
- Return the baking sheet to the oven and roast for another 10-15 minutes, or until the Brussels sprouts are tender and the sausage is cooked through and slightly browned.
- Serve hot.
Notes
- For extra crispy Brussels sprouts, you can broil for the last 2-3 minutes of cooking, watching carefully to prevent burning.
- Adjust the amount of cranberry glaze to your preference.
- Feel free to add other vegetables like diced red onion or sweet potato to the sheet pan.
