Ingredients
- 1 pound cheese tortellini, cooked and cooled
- 1 cup cooked ham, diced
- 1 cup mozzarella cheese, cubed
- 1/2 cup sun-dried tomatoes, oil-packed, drained
- 1/4 cup fresh basil, chopped
- 1/4 cup pine nuts, toasted
- 1/4 cup olive oil
- 2 tablespoons balsamic vinegar
- 1 clove garlic, minced
- Salt and pepper to taste
Instructions
- Cook tortellini according to package directions. Cool completely.
- In a large bowl, combine cooked tortellini, ham, mozzarella, sun-dried tomatoes, basil, and pine nuts.
- In a small bowl, whisk together olive oil, balsamic vinegar, minced garlic, salt, and pepper.
- Pour dressing over salad and toss gently to combine.
- Chill for at least 30 minutes before serving.
Notes
- You can substitute other cheeses such as provolone or parmesan.
- Add other vegetables such as bell peppers or olives.

- For a vegetarian option, omit the ham.
