Ingredients

  • 1 pound pasta
  • 2 tablespoons olive oil
  • 4 cloves garlic, minced
  • 4 cups ripe tomatoes, chopped
  • 1/2 cup fresh basil, chopped
  • Salt and pepper to taste
  • 1/2 cup grated Parmesan cheese (optional)


Instructions

  1. Cook pasta according to package directions.
  2. While pasta cooks, heat olive oil in a large skillet over medium heat.
  3. Add garlic and cook until fragrant, about 1 minute.
  4. Add tomatoes, salt, and pepper. Bring to a simmer and cook for 15 minutes, or until tomatoes have softened and created a sauce.
  5. Stir in fresh basil.
  6. Drain pasta and add it to the skillet with the tomato sauce. Toss to combine.
  7. Serve immediately, garnished with Parmesan cheese if desired.
