Ingredients
- 6 large eggs, separated
- 1 cup granulated sugar, divided
- 2 cups whole milk
- 1 cup heavy cream
- 1 teaspoon vanilla extract
- 1/2 teaspoon ground nutmeg, plus more for garnish
- 1/4 teaspoon salt
- Optional: 1 cup bourbon, rum, or brandy
Instructions
- In a large bowl, whisk the egg yolks with 3/4 cup of sugar until pale and thick.
- Gradually whisk in the milk, heavy cream, vanilla extract, nutmeg, and salt until well combined.
- If using alcohol, stir it in now.
- In a separate clean bowl, beat the egg whites until soft peaks form.
- Gradually add the remaining 1/4 cup of sugar and continue beating until stiff, glossy peaks form.
- Gently fold the egg whites into the yolk mixture until just combined. Do not overmix.
- Chill the eggnog for at least 2 hours, or preferably overnight, to allow the flavors to meld.
- Serve cold, garnished with a sprinkle of fresh nutmeg.

- For a non-alcoholic version, omit the spirits.
