A simple and rich French onion soup recipe. Perfect for a quick meal.
Ingredients
- 1 tablespoon olive oil
- 2 large yellow onions, thinly sliced
- 2 cloves garlic, minced
- 4 cups beef broth
- 1 teaspoon dried thyme
- Salt and black pepper to taste
- 4 slices baguette
- 2 ounces Gruyere cheese, grated
Instructions
- Heat olive oil in a pot over medium heat. Add onions and cook until softened and lightly browned, about 15-20 minutes.
- Add garlic and cook for 1 minute more until fragrant.
- Pour in beef broth and add thyme. Season with salt and pepper.
- Bring to a simmer, then reduce heat and cook for 15 minutes.
- Preheat broiler.
- Ladle soup into oven-safe bowls. Top each bowl with a slice of baguette and grated Gruyere cheese.
- Broil for 2-3 minutes, until cheese is melted and bubbly.
Notes
- For a vegetarian version, use vegetable broth instead of beef broth.
- Ensure your bowls are broiler-safe.
