Ingredients

  • 1 tablespoon olive oil
  • 2 large yellow onions, thinly sliced
  • 2 cloves garlic, minced
  • 4 cups beef broth
  • 1 teaspoon dried thyme
  • Salt and black pepper to taste
  • 4 slices baguette
  • 2 ounces Gruyere cheese, grated


Instructions

  1. Heat olive oil in a pot over medium heat. Add onions and cook until softened and lightly browned, about 15-20 minutes.
  2. Add garlic and cook for 1 minute more until fragrant.
  3. Pour in beef broth and add thyme. Season with salt and pepper.
  4. Bring to a simmer, then reduce heat and cook for 15 minutes.
  5. Preheat broiler.
  6. Ladle soup into oven-safe bowls. Top each bowl with a slice of baguette and grated Gruyere cheese.
  7. Broil for 2-3 minutes, until cheese is melted and bubbly.
