Description

These Tex-Mex Chicken Stuffed Peppers are a flavorful and healthy meal. Enjoy a combination of chicken, rice, and Tex-Mex spices in bell peppers.


Ingredients

  • 4 bell peppers, any color
  • 1 pound ground chicken
  • 1 cup cooked rice
  • 1 can (15 ounces) black beans, rinsed and drained
  • 1 cup corn kernels
  • 1 cup salsa
  • 1 packet (1 ounce) taco seasoning
  • 1 cup shredded cheddar cheese


Instructions

  1. Preheat oven to 375°F (190°C).
  2. Cut bell peppers in half lengthwise and remove seeds.
  3. Cook ground chicken in a skillet over medium heat until browned. Drain any excess grease.
  4. Stir in cooked rice, black beans, corn, salsa, and taco seasoning to the skillet with the chicken. Mix well.
  5. Stuff each bell pepper half with the chicken mixture.
  6. Place stuffed peppers in a baking dish.
  7. Sprinkle cheddar cheese over the top of each pepper.
  8. Bake for 25-30 minutes, or until peppers are tender and cheese is melted and bubbly.
  9. Let cool slightly before serving.

Notes

  • Add a dollop of sour cream or Greek yogurt when serving.
  • Adjust taco seasoning to your preference.
  • Use ground turkey instead of chicken.
