Description
Make a delicious Teriyaki Chicken Pineapple Bowl for a quick and easy meal.
Ingredients
- 1 lb boneless, skinless chicken thighs, cut into bite-sized pieces
- 1/2 cup teriyaki sauce
- 1 tbsp soy sauce
- 1 tbsp honey
- 1 tsp ginger, grated
- 1/2 tsp garlic, minced
- 1 pineapple, halved and hollowed out
- 1 cup cooked rice
- 1/2 cup bell peppers, sliced
- 1/4 cup red onion, sliced
- 2 tbsp green onions, chopped
- 1 tbsp sesame seeds
Instructions
- Marinate chicken in teriyaki sauce, soy sauce, honey, ginger, and garlic for at least 30 minutes.
- Cook the rice according to package directions.
- Stir-fry the marinated chicken in a skillet over medium-high heat until cooked through.
- Add bell peppers and red onion to the skillet and cook until tender-crisp.
- Fill each pineapple half with cooked rice.
- Top with teriyaki chicken and vegetable mixture.
- Garnish with green onions and sesame seeds.
- Serve immediately.
Notes
- Adjust teriyaki sauce amount to your taste.
- Use chicken breast instead of thighs if you prefer.
- Add other vegetables like broccoli or carrots.
- For a spicier bowl, add a pinch of red pepper flakes.
