Description

Make a delicious Teriyaki Chicken Pineapple Bowl for a quick and easy meal.


Ingredients

  • 1 lb boneless, skinless chicken thighs, cut into bite-sized pieces
  • 1/2 cup teriyaki sauce
  • 1 tbsp soy sauce
  • 1 tbsp honey
  • 1 tsp ginger, grated
  • 1/2 tsp garlic, minced
  • 1 pineapple, halved and hollowed out
  • 1 cup cooked rice
  • 1/2 cup bell peppers, sliced
  • 1/4 cup red onion, sliced
  • 2 tbsp green onions, chopped
  • 1 tbsp sesame seeds


Instructions

  1. Marinate chicken in teriyaki sauce, soy sauce, honey, ginger, and garlic for at least 30 minutes.
  2. Cook the rice according to package directions.
  3. Stir-fry the marinated chicken in a skillet over medium-high heat until cooked through.
  4. Add bell peppers and red onion to the skillet and cook until tender-crisp.
  5. Fill each pineapple half with cooked rice.
  6. Top with teriyaki chicken and vegetable mixture.
  7. Garnish with green onions and sesame seeds.
  8. Serve immediately.
