Ingredients
- 2 large sweet potatoes
- 1 pound ground beef
- 1 packet taco seasoning
- 1/2 cup water
- 1/2 cup shredded cheddar cheese
- 1/4 cup sour cream
- 1/4 cup salsa
- 1/4 cup chopped cilantro
Instructions
- Preheat oven to 400°F (200°C).
- Wash and poke sweet potatoes with a fork.
- Bake for 45-60 minutes, or until soft.
- While potatoes bake, brown ground beef in a skillet.
- Drain excess grease.
- Stir in taco seasoning and water.
- Simmer for 5 minutes.
- Slice sweet potatoes open and fluff the inside.
- Top with ground beef mixture, cheese, sour cream, salsa, and cilantro.
- Serve immediately.
Notes
- You can use any toppings you like.
- For a vegetarian option, use black beans instead of ground beef.
