Description

Enjoy a healthy and delicious meal with these Taco Stuffed Sweet Potatoes. They are easy to make and perfect for a family dinner.


Ingredients

  • 2 large sweet potatoes
  • 1 pound ground beef
  • 1 packet taco seasoning
  • 1/2 cup water
  • 1/2 cup shredded cheddar cheese
  • 1/4 cup sour cream
  • 1/4 cup salsa
  • 1/4 cup chopped cilantro


Instructions

  1. Preheat oven to 400°F (200°C).
  2. Wash and poke sweet potatoes with a fork.
  3. Bake for 45-60 minutes, or until soft.
  4. While potatoes bake, brown ground beef in a skillet.
  5. Drain excess grease.
  6. Stir in taco seasoning and water.
  7. Simmer for 5 minutes.
  8. Slice sweet potatoes open and fluff the inside.
  9. Top with ground beef mixture, cheese, sour cream, salsa, and cilantro.
  10. Serve immediately.

Notes

  • You can use any toppings you like.
  • For a vegetarian option, use black beans instead of ground beef.
