Description
Enjoy a cozy and healthy Sweet Potato & Chicken Skillet dinner. It is easy to make and ready in 30 minutes.
Ingredients
- 1 lb boneless, skinless chicken breasts, cut into 1-inch pieces
- 1 large sweet potato, peeled and diced
- 1 red bell pepper, chopped
- 1/2 onion, chopped
- 2 cloves garlic, minced
- 1 tbsp olive oil
- 1 tsp smoked paprika
- 1/2 tsp cumin
- 1/4 tsp chili powder
- Salt and pepper to taste
- Optional: chopped cilantro for garnish
Instructions
- Heat olive oil in a large skillet over medium-high heat.
- Add chicken and cook until browned and cooked through. Season with salt, pepper, paprika, cumin, and chili powder. Remove chicken from skillet and set aside.
- Add sweet potato, bell pepper, and onion to the skillet. Cook until sweet potato is tender, about 8-10 minutes. Add garlic and cook for 1 minute more.
- Return chicken to the skillet. Stir to combine.
- Serve immediately. Garnish with cilantro, if desired.
Notes
- You can add other vegetables, such as broccoli or zucchini.
- Adjust the amount of spices to your liking.
- For a spicier dish, add a pinch of cayenne pepper.
