Description

Enjoy a cozy and healthy Sweet Potato & Chicken Skillet dinner. It is easy to make and ready in 30 minutes.


Ingredients

  • 1 lb boneless, skinless chicken breasts, cut into 1-inch pieces
  • 1 large sweet potato, peeled and diced
  • 1 red bell pepper, chopped
  • 1/2 onion, chopped
  • 2 cloves garlic, minced
  • 1 tbsp olive oil
  • 1 tsp smoked paprika
  • 1/2 tsp cumin
  • 1/4 tsp chili powder
  • Salt and pepper to taste
  • Optional: chopped cilantro for garnish


Instructions

  1. Heat olive oil in a large skillet over medium-high heat.
  2. Add chicken and cook until browned and cooked through. Season with salt, pepper, paprika, cumin, and chili powder. Remove chicken from skillet and set aside.
  3. Add sweet potato, bell pepper, and onion to the skillet. Cook until sweet potato is tender, about 8-10 minutes. Add garlic and cook for 1 minute more.
  4. Return chicken to the skillet. Stir to combine.
  5. Serve immediately. Garnish with cilantro, if desired.

Notes

  • You can add other vegetables, such as broccoli or zucchini.
  • Adjust the amount of spices to your liking.
  • For a spicier dish, add a pinch of cayenne pepper.
