Ingredients
- 1 lb chicken breast, cubed
- 2 ears of corn, kernels removed
- 1 red bell pepper, diced
- 1/2 red onion, diced
- 1 jalapeno, minced
- 1/4 cup cilantro, chopped
- 1/4 cup lime juice
- 2 tbsp olive oil
- 1 tsp chili powder
- 1/2 tsp cumin
- Salt and pepper to taste
- Cooked rice or quinoa for serving
- Optional toppings: avocado, sour cream, cotija cheese
Instructions
- Marinate chicken in lime juice, chili powder, cumin, salt, and pepper for 15 minutes.
- Heat olive oil in a large skillet over medium-high heat.
- Add chicken and cook until browned and cooked through.
- Add corn, bell pepper, onion, and jalapeno to the skillet. Cook until vegetables are tender.
- Stir in cilantro.
- Serve over rice or quinoa. Top with optional toppings.
Notes
- Adjust spice level by adding more or less jalapeno.
- Use frozen corn if fresh corn is not available.
- Prepare rice or quinoa ahead of time for faster meal preparation.
