Ingredients

  • 1 lb chicken breast, cubed
  • 2 ears of corn, kernels removed
  • 1 red bell pepper, diced
  • 1/2 red onion, diced
  • 1 jalapeno, minced
  • 1/4 cup cilantro, chopped
  • 1/4 cup lime juice
  • 2 tbsp olive oil
  • 1 tsp chili powder
  • 1/2 tsp cumin
  • Salt and pepper to taste
  • Cooked rice or quinoa for serving
  • Optional toppings: avocado, sour cream, cotija cheese


Instructions

  1. Marinate chicken in lime juice, chili powder, cumin, salt, and pepper for 15 minutes.
  2. Heat olive oil in a large skillet over medium-high heat.
  3. Add chicken and cook until browned and cooked through.
  4. Add corn, bell pepper, onion, and jalapeno to the skillet. Cook until vegetables are tender.
  5. Stir in cilantro.
  6. Serve over rice or quinoa. Top with optional toppings.
