Ingredients
- 1 cup all-purpose flour
- 1/2 teaspoon baking powder
- 1/4 teaspoon salt
- 1/2 cup unsalted butter, softened
- 1 cup granulated sugar
- 2 large eggs
- 1 teaspoon lemon extract
- 1/4 cup lemon juice
- 1 cup fresh strawberries, diced
- 1 cup powdered sugar
- 2 tablespoons milk
Instructions
- Preheat oven to 350°F (175°C). Grease and flour a 9×13 inch baking pan.
- In a bowl, whisk together flour, baking powder, and salt.
- In a separate bowl, cream together butter and sugar until light and fluffy. Beat in eggs one at a time, then stir in lemon extract and lemon juice.
- Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
- Fold in the diced strawberries.
- Pour batter into the prepared pan and spread evenly.
- Bake for 25-30 minutes, or until a toothpick inserted into the center comes out with a few moist crumbs.
- Let cool completely in the pan before frosting.
- For the frosting, whisk together powdered sugar and milk until smooth.
- Spread frosting over cooled blondies and cut into squares.
