Description

These Strawberry Lemon Blondies are a sweet and tangy treat. They combine the flavors of fresh strawberries and zesty lemon in a soft, chewy bar.


Ingredients

  • 1 cup all-purpose flour
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1/2 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 2 large eggs
  • 1 teaspoon lemon extract
  • 1/4 cup lemon juice
  • 1 cup fresh strawberries, diced
  • 1 cup powdered sugar
  • 2 tablespoons milk


Instructions

  1. Preheat oven to 350°F (175°C). Grease and flour a 9×13 inch baking pan.
  2. In a bowl, whisk together flour, baking powder, and salt.
  3. In a separate bowl, cream together butter and sugar until light and fluffy. Beat in eggs one at a time, then stir in lemon extract and lemon juice.
  4. Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
  5. Fold in the diced strawberries.
  6. Pour batter into the prepared pan and spread evenly.
  7. Bake for 25-30 minutes, or until a toothpick inserted into the center comes out with a few moist crumbs.
  8. Let cool completely in the pan before frosting.
  9. For the frosting, whisk together powdered sugar and milk until smooth.
  10. Spread frosting over cooled blondies and cut into squares.
