Prepare quick and healthy Steak & Broccoli High-Protein Boxes for balanced meals.
Ingredients
- 1 lb steak, cut into bite-sized pieces
- 4 cups broccoli florets
- 2 tbsp olive oil
- 1 tbsp soy sauce
- 1 tsp garlic powder
- 1/2 tsp black pepper
- 1 cup cooked quinoa or brown rice
Instructions
- Preheat oven to 400°F (200°C).
- In a bowl, toss broccoli with 1 tbsp olive oil, garlic powder, and pepper.
- Spread broccoli on a baking sheet and roast for 15-20 minutes.
- While broccoli roasts, heat remaining olive oil in a skillet over medium-high heat.
- Add steak and soy sauce to the skillet and cook for 5-7 minutes, or until steak is cooked to your liking.
- Divide cooked quinoa or brown rice among meal prep containers.
- Add roasted broccoli and cooked steak to each container.
- Refrigerate until ready to eat.
Notes
- Adjust cooking times based on your oven and desired doneness of steak.
- You can substitute other vegetables for broccoli.
- Store in airtight containers in the refrigerator for up to 4 days.
