Description

Enjoy a comforting and easy Spinach Ricotta Skillet Pasta made without an oven. This dish is perfect for a quick vegetarian dinner.


Ingredients

  • 1 pound pasta
  • 1 tablespoon olive oil
  • 2 cloves garlic, minced
  • 5 ounces fresh spinach
  • 15 ounces ricotta cheese
  • 1/2 cup grated Parmesan cheese
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 cup pasta water, reserved


Instructions

  1. Cook pasta according to package directions. Reserve 1 cup of pasta water before draining.
  2. Heat olive oil in a large skillet over medium heat. Add garlic and cook until fragrant, about 1 minute.
  3. Add spinach and cook until wilted, about 2-3 minutes.
  4. Stir in ricotta cheese, Parmesan cheese, salt, and pepper.
  5. Add cooked pasta to the skillet and toss to combine.
  6. Add reserved pasta water, a little at a time, until the sauce reaches your desired consistency.
  7. Serve immediately.

Notes

  • You can use any type of pasta you prefer.
  • For a richer flavor, use whole milk ricotta cheese.
  • Add a pinch of red pepper flakes for a little heat.
