Ingredients

  • 1 lb chicken breast, cubed
  • 1 tbsp olive oil
  • 1 packet ranch seasoning
  • 1 tsp chili powder
  • 1/2 tsp cumin
  • 1/4 tsp cayenne pepper (optional)
  • 1 cup cooked rice
  • 1/2 cup black beans
  • 1/2 cup corn
  • 1/4 cup shredded cheddar cheese
  • 2 tbsp ranch dressing
  • Optional toppings: avocado, salsa, green onions


Instructions

  1. Heat olive oil in a large skillet over medium-high heat.
  2. Add cubed chicken breast to the skillet.
  3. Season with ranch seasoning, chili powder, cumin, and cayenne pepper (if using).
  4. Cook chicken until fully cooked, about 6-8 minutes.
  5. Assemble bowls with cooked rice, black beans, corn, and cooked chicken.
