Description
Enjoy a Spicy Ramen-Inspired Pasta Bowl. This dish combines the comfort of pasta with the bold flavors of spicy ramen.
Ingredients
- 8 oz pasta (spaghetti or ramen noodles)
- 1 lb boneless, skinless chicken thighs, cut into bite-sized pieces
- 1 tbsp olive oil
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 red bell pepper, sliced
- 4 cups chicken broth
- 2 tbsp soy sauce
- 1 tbsp gochujang (Korean chili paste)
- 1 tsp sesame oil
- 1/2 tsp ginger, grated
- Green onions, sliced (for garnish)
- Sesame seeds (for garnish)
- Optional: Soft-boiled egg (for serving)
Instructions
- Cook pasta according to package directions. Drain and set aside.
- Heat olive oil in a large pot or Dutch oven over medium-high heat. Add chicken and cook until browned.
- Add onion, garlic, and red bell pepper to the pot. Cook until softened, about 5 minutes.
- Pour in chicken broth, soy sauce, gochujang, sesame oil, and ginger. Bring to a boil, then reduce heat and simmer for 10 minutes.
- Add cooked pasta to the pot and stir to combine.
- Serve hot, garnished with green onions and sesame seeds. Add a soft-boiled egg if desired.
Notes
- Adjust the amount of gochujang to control the spiciness.
- Use vegetable broth for a vegetarian option.
- Add other vegetables like mushrooms or bok choy.
