Description

Enjoy a Spicy Ramen-Inspired Pasta Bowl. This dish combines the comfort of pasta with the bold flavors of spicy ramen.


Ingredients

  • 8 oz pasta (spaghetti or ramen noodles)
  • 1 lb boneless, skinless chicken thighs, cut into bite-sized pieces
  • 1 tbsp olive oil
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 red bell pepper, sliced
  • 4 cups chicken broth
  • 2 tbsp soy sauce
  • 1 tbsp gochujang (Korean chili paste)
  • 1 tsp sesame oil
  • 1/2 tsp ginger, grated
  • Green onions, sliced (for garnish)
  • Sesame seeds (for garnish)
  • Optional: Soft-boiled egg (for serving)


Instructions

  1. Cook pasta according to package directions. Drain and set aside.
  2. Heat olive oil in a large pot or Dutch oven over medium-high heat. Add chicken and cook until browned.
  3. Add onion, garlic, and red bell pepper to the pot. Cook until softened, about 5 minutes.
  4. Pour in chicken broth, soy sauce, gochujang, sesame oil, and ginger. Bring to a boil, then reduce heat and simmer for 10 minutes.
  5. Add cooked pasta to the pot and stir to combine.
  6. Serve hot, garnished with green onions and sesame seeds. Add a soft-boiled egg if desired.
