Description

Enjoy a flavorful and easy Spicy One Pot Chicken Rice. It is perfect for a quick weeknight dinner.


Ingredients

  • 1 lb boneless, skinless chicken thighs, cut into bite-sized pieces
  • 1 tbsp olive oil
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 red bell pepper, chopped
  • 1 jalapeño, seeded and minced
  • 1 tsp smoked paprika
  • 1/2 tsp cumin
  • 1/4 tsp cayenne pepper
  • 1 cup long-grain rice
  • 2 cups chicken broth
  • 1 (14.5 oz) can diced tomatoes, undrained
  • 1/4 cup chopped cilantro
  • Salt and pepper to taste


Instructions

  1. Heat olive oil in a large pot or Dutch oven over medium-high heat.
  2. Add chicken and cook until browned on all sides. Season with salt and pepper. Remove chicken from pot and set aside.
  3. Add onion, garlic, bell pepper, and jalapeño to the pot. Cook until softened, about 5 minutes.
  4. Stir in smoked paprika, cumin, and cayenne pepper. Cook for 1 minute more.
  5. Add rice, chicken broth, and diced tomatoes to the pot. Bring to a boil.
  6. Return chicken to the pot. Reduce heat to low, cover, and simmer for 20-25 minutes, or until rice is cooked and liquid is absorbed.
  7. Stir in cilantro. Serve hot.

Notes

  • Adjust the amount of jalapeño and cayenne pepper to your preferred spice level.
  • For extra flavor, use chicken thighs instead of chicken breast.
  • Garnish with extra cilantro and a squeeze of lime juice, if desired.
