Description
Enjoy a flavorful and easy Spicy One Pot Chicken Rice. It is perfect for a quick weeknight dinner.
Ingredients
- 1 lb boneless, skinless chicken thighs, cut into bite-sized pieces
- 1 tbsp olive oil
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 red bell pepper, chopped
- 1 jalapeño, seeded and minced
- 1 tsp smoked paprika
- 1/2 tsp cumin
- 1/4 tsp cayenne pepper
- 1 cup long-grain rice
- 2 cups chicken broth
- 1 (14.5 oz) can diced tomatoes, undrained
- 1/4 cup chopped cilantro
- Salt and pepper to taste
Instructions
- Heat olive oil in a large pot or Dutch oven over medium-high heat.
- Add chicken and cook until browned on all sides. Season with salt and pepper. Remove chicken from pot and set aside.
- Add onion, garlic, bell pepper, and jalapeño to the pot. Cook until softened, about 5 minutes.
- Stir in smoked paprika, cumin, and cayenne pepper. Cook for 1 minute more.
- Add rice, chicken broth, and diced tomatoes to the pot. Bring to a boil.
- Return chicken to the pot. Reduce heat to low, cover, and simmer for 20-25 minutes, or until rice is cooked and liquid is absorbed.
- Stir in cilantro. Serve hot.
Notes
- Adjust the amount of jalapeño and cayenne pepper to your preferred spice level.
- For extra flavor, use chicken thighs instead of chicken breast.
- Garnish with extra cilantro and a squeeze of lime juice, if desired.
