Description

A quick and easy spicy Cajun shrimp pasta dish perfect for a weeknight meal. This one-pot wonder combines tender shrimp, flavorful Cajun spices, and pasta in a rich, creamy sauce.


Ingredients

  • 1 pound large shrimp, peeled and deveined
  • 8 ounces linguine or fettuccine
  • 1 tablespoon olive oil
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 1 red bell pepper, chopped
  • 1 (14.5 ounce) can diced tomatoes, undrained
  • 1/2 cup heavy cream
  • 1/4 cup grated Parmesan cheese
  • 1 teaspoon Cajun seasoning
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • Fresh parsley, chopped (for garnish)


Instructions

  1. Cook pasta according to package directions. Drain, reserving about 1/2 cup of pasta water.
  2. While pasta cooks, heat olive oil in a large skillet over medium heat. Add onion and bell pepper; cook until softened, about 5 minutes.
  3. Add garlic and Cajun seasoning; cook for 1 minute until fragrant.
  4. Stir in diced tomatoes, heavy cream, salt, and pepper. Bring to a simmer.
  5. Add shrimp to the skillet. Cook for 3-4 minutes, or until shrimp are pink and cooked through.
  6. Add cooked pasta and Parmesan cheese to the skillet. Toss to combine. If sauce is too thick, add a little reserved pasta water until desired consistency is reached.
  7. Serve immediately, garnished with fresh parsley.

Notes

  • Adjust Cajun seasoning to your spice preference.
  • For a less creamy sauce, use half-and-half instead of heavy cream.
  • You can add other vegetables like corn or peas.
