Description

Enjoy a protein-packed Spicy Beef & Black Bean Bowl without rice. This is a healthy and flavorful meal.


Ingredients

  • 1 lb Ground Beef
  • 1 tbsp Olive Oil
  • 1 Onion, chopped
  • 2 cloves Garlic, minced
  • 1 Red Bell Pepper, chopped
  • 1 Jalapeño, minced (optional)
  • 1 can (15 oz) Black Beans, rinsed and drained
  • 1 can (14.5 oz) Diced Tomatoes, undrained
  • 1 tbsp Chili Powder
  • 1 tsp Cumin
  • 1/2 tsp Smoked Paprika
  • Salt and Pepper to taste
  • Optional toppings: Avocado, Greek Yogurt, Cilantro, Lime Wedges


Instructions

  1. Heat olive oil in a large skillet over medium-high heat.
  2. Add ground beef and cook, breaking it apart, until browned. Drain excess fat.
  3. Add onion, garlic, bell pepper, and jalapeño (if using) to the skillet. Cook until softened, about 5 minutes.
  4. Stir in black beans, diced tomatoes, chili powder, cumin, smoked paprika, salt, and pepper.
  5. Bring to a simmer and cook for 10 minutes, stirring occasionally, to allow flavors to meld.
  6. Serve hot in bowls. Top with your favorite toppings like avocado, Greek yogurt, cilantro, and lime wedges.

Notes

  • For less spice, omit the jalapeño or remove the seeds before mincing.
  • You can substitute ground turkey or chicken for ground beef.
  • Adjust the amount of chili powder to your preference.
