Ingredients
- 4 boneless, skinless chicken breasts
- 1 cup long grain rice
- 2 cups chicken broth
- 1/4 cup lemon juice
- 2 tablespoons olive oil
- 1 tablespoon dried herbs (Italian mix)
- 1 teaspoon garlic powder
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1 lemon, sliced
Instructions
- Place rice in the slow cooker.
- Pour chicken broth and lemon juice over the rice.
- Add olive oil, dried herbs, garlic powder, salt, and pepper. Stir well.
- Place chicken breasts on top of the rice mixture.
- Arrange lemon slices over the chicken.
- Cover and cook on low for 6-8 hours or on high for 3-4 hours, or until chicken is cooked through and rice is tender.
- Shred the chicken with two forks before serving.
Notes
- For extra flavor, brown the chicken in a pan before adding it to the slow cooker.
- You can add vegetables such as carrots, celery, or peas to the slow cooker.
- Adjust the amount of lemon juice to your preference.
