Description

Enjoy a flavorful and easy Slow Cooker Lemon Herb Chicken and Rice. It is a perfect family meal.


Ingredients

  • 4 boneless, skinless chicken breasts
  • 1 cup long grain rice
  • 2 cups chicken broth
  • 1/4 cup lemon juice
  • 2 tablespoons olive oil
  • 1 tablespoon dried herbs (Italian mix)
  • 1 teaspoon garlic powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 lemon, sliced


Instructions

  1. Place rice in the slow cooker.
  2. Pour chicken broth and lemon juice over the rice.
  3. Add olive oil, dried herbs, garlic powder, salt, and pepper. Stir well.
  4. Place chicken breasts on top of the rice mixture.
  5. Arrange lemon slices over the chicken.
  6. Cover and cook on low for 6-8 hours or on high for 3-4 hours, or until chicken is cooked through and rice is tender.
  7. Shred the chicken with two forks before serving.

Notes

  • For extra flavor, brown the chicken in a pan before adding it to the slow cooker.
  • You can add vegetables such as carrots, celery, or peas to the slow cooker.
