Ingredients

  • 2 lbs boneless, skinless chicken thighs
  • 1 tbsp olive oil
  • 8 oz cremini mushrooms, sliced
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 tsp dried thyme
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1 cup chicken broth
  • 1/2 cup heavy cream
  • 2 tbsp all-purpose flour
  • 2 tbsp chopped fresh parsley


Instructions

  1. Heat olive oil in a large skillet over medium-high heat. Sear chicken thighs on both sides until lightly browned.
  2. Transfer chicken to a slow cooker.
  3. In the same skillet, sauté mushrooms and onion until softened. Add garlic, thyme, salt, and pepper. Cook for 1 minute more.
  4. Pour mushroom mixture over chicken in the slow cooker. Add chicken broth.
  5. Cover and cook on low for 6-8 hours or on high for 3-4 hours.
  6. In a small bowl, whisk together heavy cream and flour until smooth.
  7. Stir cream mixture into the slow cooker. Cook on high for 30 minutes, or until sauce has thickened.
  8. Garnish with fresh parsley before serving.

Notes

  • Serve over rice, pasta, or mashed potatoes.
  • You can substitute chicken breasts for chicken thighs. Adjust cooking time accordingly.
  • For a thicker sauce, use more flour.
