Ingredients
- 2 lbs boneless, skinless chicken thighs
- 1 tbsp olive oil
- 8 oz cremini mushrooms, sliced
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 tsp dried thyme
- 1/2 tsp salt
- 1/4 tsp black pepper
- 1 cup chicken broth
- 1/2 cup heavy cream
- 2 tbsp all-purpose flour
- 2 tbsp chopped fresh parsley
Instructions
- Heat olive oil in a large skillet over medium-high heat. Sear chicken thighs on both sides until lightly browned.
- Transfer chicken to a slow cooker.
- In the same skillet, sauté mushrooms and onion until softened. Add garlic, thyme, salt, and pepper. Cook for 1 minute more.
- Pour mushroom mixture over chicken in the slow cooker. Add chicken broth.
- Cover and cook on low for 6-8 hours or on high for 3-4 hours.
- In a small bowl, whisk together heavy cream and flour until smooth.
- Stir cream mixture into the slow cooker. Cook on high for 30 minutes, or until sauce has thickened.
- Garnish with fresh parsley before serving.
Notes
- Serve over rice, pasta, or mashed potatoes.
- You can substitute chicken breasts for chicken thighs. Adjust cooking time accordingly.
- For a thicker sauce, use more flour.
