Description

A simple and healthy sheet pan dinner featuring turmeric chicken and sweet peppers. This anti-inflammatory meal is perfect for a quick weeknight dinner.


Ingredients

  • 1.5 lbs boneless, skinless chicken thighs, cut into 1-inch pieces
  • 2 large bell peppers (any color), seeded and cut into 1-inch pieces
  • 1 medium red onion, cut into 1-inch pieces
  • 2 tablespoons olive oil
  • 1 tablespoon ground turmeric
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • Fresh parsley, chopped, for garnish (optional)


Instructions

  1. Preheat your oven to 400°F (200°C).
  2. In a large bowl, combine the chicken pieces, bell pepper pieces, and red onion pieces.
  3. Drizzle with olive oil.
  4. Add turmeric, garlic powder, onion powder, salt, and pepper.
  5. Toss everything together until the chicken and vegetables are evenly coated.
  6. Spread the mixture in a single layer on a large baking sheet.
  7. Bake for 20-25 minutes, or until the chicken is cooked through and the vegetables are tender and slightly caramelized.
  8. Garnish with fresh parsley if desired.

Notes

  • You can use chicken breasts instead of thighs, but adjust the cooking time as they cook faster.
  • Feel free to add other vegetables like broccoli florets or zucchini.
