Description
Sheet Pan Parmesan Orzo & Shrimp is an easy and healthy dinner. It is quick to prepare and cook on one pan.
Ingredients
- 1 pound large shrimp, peeled and deveined
- 1 cup orzo pasta
- 1 red bell pepper, chopped
- 1 zucchini, chopped
- 1/2 cup cherry tomatoes, halved
- 2 cloves garlic, minced
- 2 tablespoons olive oil
- 1/4 cup grated Parmesan cheese
- 1 teaspoon dried oregano
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
Instructions
- Preheat oven to 400°F (200°C).
- In a large bowl, toss shrimp, orzo, bell pepper, zucchini, cherry tomatoes, and garlic with olive oil, Parmesan cheese, oregano, salt, and pepper.
- Spread mixture evenly on a sheet pan.
- Bake for 15-20 minutes, or until shrimp is pink and orzo is tender.
- Serve immediately.
Notes
- For extra flavor, add a squeeze of lemon juice before serving.
- You can substitute other vegetables, like broccoli or asparagus.
