Description

Sheet Pan Parmesan Orzo & Shrimp is an easy and healthy dinner. It is quick to prepare and cook on one pan.


Ingredients

  • 1 pound large shrimp, peeled and deveined
  • 1 cup orzo pasta
  • 1 red bell pepper, chopped
  • 1 zucchini, chopped
  • 1/2 cup cherry tomatoes, halved
  • 2 cloves garlic, minced
  • 2 tablespoons olive oil
  • 1/4 cup grated Parmesan cheese
  • 1 teaspoon dried oregano
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper


Instructions

  1. Preheat oven to 400°F (200°C).
  2. In a large bowl, toss shrimp, orzo, bell pepper, zucchini, cherry tomatoes, and garlic with olive oil, Parmesan cheese, oregano, salt, and pepper.
  3. Spread mixture evenly on a sheet pan.
  4. Bake for 15-20 minutes, or until shrimp is pink and orzo is tender.
  5. Serve immediately.

Notes

  • For extra flavor, add a squeeze of lemon juice before serving.
  • You can substitute other vegetables, like broccoli or asparagus.
