Ingredients

  • 1.5 lbs boneless, skinless chicken breasts, cut into 1-inch pieces
  • 1 lb broccoli florets
  • 1 red bell pepper, chopped
  • 1 yellow bell pepper, chopped
  • 1 red onion, chopped
  • 2 tbsp olive oil
  • 1 tsp garlic powder
  • 1 tsp Italian seasoning
  • 0.5 tsp salt
  • 0.25 tsp black pepper
  • 0.5 cup grated Parmesan cheese
  • Optional: Lemon wedges for serving


Instructions

  1. Preheat your oven to 400°F (200°C).
  2. In a large bowl, toss the chicken pieces, broccoli florets, chopped bell peppers, and chopped red onion with olive oil, garlic powder, Italian seasoning, salt, and pepper.
  3. Spread the chicken and vegetables in a single layer on a large baking sheet.
  4. Bake for 20 minutes.
  5. Remove the baking sheet from the oven and sprinkle evenly with grated Parmesan cheese.
  6. Return to the oven and bake for another 5-10 minutes, or until the chicken is cooked through and the vegetables are tender and lightly browned.
  7. Serve hot, with lemon wedges if desired.
