Description

A simple sheet pan dinner featuring flavorful Moroccan chicken meatballs roasted alongside tender carrots. This one-pan meal offers a taste of Mediterranean flavors, perfect for a quick weeknight dinner.


Ingredients

  • 1 lb ground chicken
  • 1/2 cup breadcrumbs
  • 1/4 cup finely chopped onion
  • 2 cloves garlic, minced
  • 1 egg
  • 1 teaspoon ground cumin
  • 1 teaspoon ground coriander
  • 1/2 teaspoon smoked paprika
  • 1/4 teaspoon cayenne pepper
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 lb carrots, peeled and cut into 1-inch pieces
  • 2 tablespoons olive oil
  • 1 tablespoon lemon juice
  • Fresh cilantro, chopped (for garnish)


Instructions

  1. Preheat your oven to 400°F (200°C).
  2. In a medium bowl, combine ground chicken, breadcrumbs, chopped onion, minced garlic, egg, cumin, coriander, smoked paprika, cayenne pepper, salt, and black pepper. Mix well until all ingredients are evenly distributed.
  3. Form the chicken mixture into small meatballs, about 1-inch in diameter.
  4. On a large baking sheet, toss the carrot pieces with olive oil, lemon juice, salt, and pepper. Spread them in a single layer.
  5. Arrange the chicken meatballs on the same baking sheet among the carrots.
  6. Roast for 20-25 minutes, or until the meatballs are cooked through and the carrots are tender and slightly caramelized.
  7. Garnish with fresh cilantro before serving.
