Description
A simple and healthy sheet pan meal featuring tender salmon fillets glazed with sweet maple syrup and roasted alongside crisp Brussels sprouts. This recipe is perfect for a quick and delicious weeknight dinner.
Ingredients
- 1.5 lbs salmon fillets
- 1 lb Brussels sprouts, trimmed and halved
- 2 tablespoons olive oil
- 1/4 cup maple syrup
- 1 tablespoon soy sauce
- 1 teaspoon Dijon mustard
- Salt and black pepper to taste
Instructions
- Preheat your oven to 400°F (200°C).
- Toss the Brussels sprouts with olive oil, salt, and pepper on a large baking sheet.
- Roast the Brussels sprouts for 15 minutes.
- While the Brussels sprouts are roasting, whisk together the maple syrup, soy sauce, and Dijon mustard in a small bowl.
- Pat the salmon fillets dry and season with salt and pepper.
- Remove the baking sheet from the oven. Push the Brussels sprouts to one side and place the salmon fillets on the other side.
- Brush the maple glaze over the salmon fillets.
- Return the baking sheet to the oven and bake for another 12-15 minutes, or until the salmon is cooked through and flakes easily with a fork, and the Brussels sprouts are tender and slightly caramelized.
- Serve immediately.
Notes
- For crispier Brussels sprouts, you can broil for the last 1-2 minutes, watching carefully to prevent burning.
- Adjust the sweetness of the glaze by adding more or less maple syrup.
- You can add other vegetables like chopped sweet potatoes or red onion to the sheet pan.
