Description

A simple and healthy sheet pan meal featuring tender salmon fillets glazed with sweet maple syrup and roasted alongside crisp Brussels sprouts. This recipe is perfect for a quick and delicious weeknight dinner.


Ingredients

  • 1.5 lbs salmon fillets
  • 1 lb Brussels sprouts, trimmed and halved
  • 2 tablespoons olive oil
  • 1/4 cup maple syrup
  • 1 tablespoon soy sauce
  • 1 teaspoon Dijon mustard
  • Salt and black pepper to taste


Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Toss the Brussels sprouts with olive oil, salt, and pepper on a large baking sheet.
  3. Roast the Brussels sprouts for 15 minutes.
  4. While the Brussels sprouts are roasting, whisk together the maple syrup, soy sauce, and Dijon mustard in a small bowl.
  5. Pat the salmon fillets dry and season with salt and pepper.
  6. Remove the baking sheet from the oven. Push the Brussels sprouts to one side and place the salmon fillets on the other side.
  7. Brush the maple glaze over the salmon fillets.
  8. Return the baking sheet to the oven and bake for another 12-15 minutes, or until the salmon is cooked through and flakes easily with a fork, and the Brussels sprouts are tender and slightly caramelized.
  9. Serve immediately.

Notes

  • For crispier Brussels sprouts, you can broil for the last 1-2 minutes, watching carefully to prevent burning.
  • Adjust the sweetness of the glaze by adding more or less maple syrup.
  • You can add other vegetables like chopped sweet potatoes or red onion to the sheet pan.
