Ingredients

  • 1.5 lbs boneless, skinless chicken thighs, cut into 1-inch pieces
  • 1 lb broccoli florets
  • 2 tablespoons olive oil
  • 1 tablespoon lemon juice
  • 1 teaspoon lemon zest
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon black pepper
  • 1/2 teaspoon salt
  • Optional: red pepper flakes for a touch of heat


Instructions

  1. Preheat your oven to 400°F (200°C).
  2. In a large bowl, toss the chicken pieces with 1 tablespoon of olive oil, half of the lemon juice, half of the lemon zest, garlic powder, onion powder, black pepper, salt, and optional red pepper flakes.
  3. In a separate bowl, toss the broccoli florets with the remaining 1 tablespoon of olive oil, remaining lemon juice, and remaining lemon zest.
  4. Spread the seasoned chicken in a single layer on one side of a large baking sheet.
  5. Arrange the seasoned broccoli on the other side of the baking sheet.
  6. Bake for 20-25 minutes, or until the chicken is cooked through and the broccoli is tender-crisp.
  7. Serve hot.
