Description

A simple and delicious sheet pan dinner featuring flaky cod, tender potatoes, and a bright lemon-garlic flavor. Everything cooks together on one pan for easy cleanup.


Ingredients

  • 1.5 lbs small red potatoes, quartered
  • 2 tbsp olive oil
  • 1 tsp salt
  • 0.5 tsp black pepper
  • 1 lb cod fillets, cut into 4 portions
  • 2 tbsp olive oil
  • 3 cloves garlic, minced
  • 1 lemon, juiced
  • 1 tbsp fresh parsley, chopped


Instructions

  1. Preheat your oven to 400°F (200°C).
  2. On a large baking sheet, toss the potatoes with 2 tablespoons of olive oil, salt, and pepper. Spread them in a single layer.
  3. Roast the potatoes for 20 minutes.
  4. While the potatoes roast, pat the cod fillets dry. In a small bowl, whisk together 2 tablespoons of olive oil, minced garlic, and lemon juice.
  5. After 20 minutes, remove the baking sheet from the oven. Add the cod fillets to the pan among the potatoes.
  6. Brush the lemon-garlic mixture over the cod fillets.
  7. Return the baking sheet to the oven and bake for another 10-12 minutes, or until the cod is cooked through and flakes easily with a fork, and the potatoes are tender and crispy.
  8. Garnish with fresh parsley before serving.

  • Ensure potatoes are cut into uniform sizes for even cooking.
  • Adjust lemon juice to your preference.
  • You can add other vegetables like broccoli or asparagus in the last 10 minutes of cooking.
