Description
A simple and delicious sheet pan dinner featuring flaky cod, tender potatoes, and a bright lemon-garlic flavor. Everything cooks together on one pan for easy cleanup.
Ingredients
- 1.5 lbs small red potatoes, quartered
- 2 tbsp olive oil
- 1 tsp salt
- 0.5 tsp black pepper
- 1 lb cod fillets, cut into 4 portions
- 2 tbsp olive oil
- 3 cloves garlic, minced
- 1 lemon, juiced
- 1 tbsp fresh parsley, chopped
Instructions
- Preheat your oven to 400°F (200°C).
- On a large baking sheet, toss the potatoes with 2 tablespoons of olive oil, salt, and pepper. Spread them in a single layer.
- Roast the potatoes for 20 minutes.
- While the potatoes roast, pat the cod fillets dry. In a small bowl, whisk together 2 tablespoons of olive oil, minced garlic, and lemon juice.
- After 20 minutes, remove the baking sheet from the oven. Add the cod fillets to the pan among the potatoes.
- Brush the lemon-garlic mixture over the cod fillets.
- Return the baking sheet to the oven and bake for another 10-12 minutes, or until the cod is cooked through and flakes easily with a fork, and the potatoes are tender and crispy.
- Garnish with fresh parsley before serving.
Notes
- Ensure potatoes are cut into uniform sizes for even cooking.
- Adjust lemon juice to your preference.
- You can add other vegetables like broccoli or asparagus in the last 10 minutes of cooking.
