Description

A quick and easy sheet pan dinner featuring Italian sausage, sweet peppers, and tender gnocchi baked together with Italian seasonings.


Ingredients

  • 1 lb Italian sausage, cut into 1-inch pieces
  • 1 lb gnocchi
  • 2 bell peppers (any color), sliced
  • 1 red onion, sliced
  • 2 tbsp olive oil
  • 1 tsp dried oregano
  • 1 tsp dried basil
  • salt and pepper to taste


Instructions

  1. Preheat your oven to 400°F (200°C).
  2. On a large baking sheet, combine the Italian sausage, gnocchi, bell peppers, and red onion.
  3. Drizzle with olive oil and sprinkle with oregano, basil, salt, and pepper.
  4. Toss everything together to coat evenly.
  5. Spread the ingredients in a single layer on the baking sheet.
  6. Bake for 20-25 minutes, or until the sausage is cooked through and the gnocchi are lightly golden and tender.
  7. Stir halfway through baking for even cooking.

Notes

  • You can add other vegetables like zucchini or cherry tomatoes.
  • Grate some Parmesan cheese over the top before serving.
  • For a spicier dish, use hot Italian sausage.
