Description
A quick and easy sheet pan dinner featuring Italian sausage, sweet peppers, and tender gnocchi baked together with Italian seasonings.
Ingredients
- 1 lb Italian sausage, cut into 1-inch pieces
- 1 lb gnocchi
- 2 bell peppers (any color), sliced
- 1 red onion, sliced
- 2 tbsp olive oil
- 1 tsp dried oregano
- 1 tsp dried basil
- salt and pepper to taste
Instructions
- Preheat your oven to 400°F (200°C).
- On a large baking sheet, combine the Italian sausage, gnocchi, bell peppers, and red onion.
- Drizzle with olive oil and sprinkle with oregano, basil, salt, and pepper.
- Toss everything together to coat evenly.
- Spread the ingredients in a single layer on the baking sheet.
- Bake for 20-25 minutes, or until the sausage is cooked through and the gnocchi are lightly golden and tender.
- Stir halfway through baking for even cooking.
Notes
- You can add other vegetables like zucchini or cherry tomatoes.
- Grate some Parmesan cheese over the top before serving.
- For a spicier dish, use hot Italian sausage.
