Description

Easy sheet pan meal featuring honey garlic pork chops and roasted vegetables. A simple and delicious dinner perfect for weeknights.


Ingredients

  • 4 bone-in pork chops
  • 1 lb broccoli florets
  • 1 red bell pepper, chopped
  • 1 yellow bell pepper, chopped
  • 1 red onion, cut into wedges
  • 3 tbsp olive oil
  • 1/4 cup honey
  • 1/4 cup soy sauce
  • 2 cloves garlic, minced
  • 1 tsp ginger, grated
  • Salt and pepper to taste


Instructions

  1. Preheat oven to 400°F (200°C).
  2. Toss broccoli, bell peppers, and red onion with olive oil, salt, and pepper on a large baking sheet.
  3. Roast vegetables for 15 minutes.
  4. While vegetables roast, whisk together honey, soy sauce, minced garlic, and grated ginger in a small bowl.
  5. Pat pork chops dry and season with salt and pepper.
  6. Remove baking sheet from oven. Push vegetables to the sides and place pork chops in the center.
  7. Brush pork chops generously with the honey garlic sauce.
  8. Return to oven and bake for another 15-20 minutes, or until pork chops are cooked through and vegetables are tender.
  9. Serve immediately.

Notes

  • For crispier vegetables, you can broil for the last 1-2 minutes of cooking.
  • Adjust honey and soy sauce ratio to your sweetness and salt preference.
  • Feel free to substitute vegetables based on what you have on hand.
