Description
Easy sheet pan meal featuring honey garlic pork chops and roasted vegetables. A simple and delicious dinner perfect for weeknights.
Ingredients
- 4 bone-in pork chops
- 1 lb broccoli florets
- 1 red bell pepper, chopped
- 1 yellow bell pepper, chopped
- 1 red onion, cut into wedges
- 3 tbsp olive oil
- 1/4 cup honey
- 1/4 cup soy sauce
- 2 cloves garlic, minced
- 1 tsp ginger, grated
- Salt and pepper to taste
Instructions
- Preheat oven to 400°F (200°C).
- Toss broccoli, bell peppers, and red onion with olive oil, salt, and pepper on a large baking sheet.
- Roast vegetables for 15 minutes.
- While vegetables roast, whisk together honey, soy sauce, minced garlic, and grated ginger in a small bowl.
- Pat pork chops dry and season with salt and pepper.
- Remove baking sheet from oven. Push vegetables to the sides and place pork chops in the center.
- Brush pork chops generously with the honey garlic sauce.
- Return to oven and bake for another 15-20 minutes, or until pork chops are cooked through and vegetables are tender.
- Serve immediately.
Notes
- For crispier vegetables, you can broil for the last 1-2 minutes of cooking.
- Adjust honey and soy sauce ratio to your sweetness and salt preference.
- Feel free to substitute vegetables based on what you have on hand.
