A simple and nutritious meal prep recipe featuring ground beef and roasted vegetables.
Ingredients
- 1 lb ground beef
- 2 cups carrots, chopped
- 2 cups zucchini, sliced
- 2 cups broccoli florets
- 2 tbsp olive oil
- 1 tsp salt
- 1 tsp black pepper
- 1 tsp garlic powder
Instructions
- Preheat oven to 400°F.
- Toss vegetables with olive oil, salt, pepper, and garlic powder.
- Spread vegetables evenly on a sheet pan.
- Brown ground beef in a skillet over medium heat.
- Add cooked ground beef to the sheet pan.
- Roast in the oven for 20-25 minutes until vegetables are tender.
- Divide into meal prep containers.

- Store in airtight containers for up to 4 days.
- Reheat in microwave for 1-2 minutes.
