Description

A simple and nutritious meal prep recipe featuring ground beef and roasted vegetables.


Ingredients

  • 1 lb ground beef
  • 2 cups carrots, chopped
  • 2 cups zucchini, sliced
  • 2 cups broccoli florets
  • 2 tbsp olive oil
  • 1 tsp salt
  • 1 tsp black pepper
  • 1 tsp garlic powder


Instructions

  1. Preheat oven to 400°F.
  2. Toss vegetables with olive oil, salt, pepper, and garlic powder.
  3. Spread vegetables evenly on a sheet pan.
  4. Brown ground beef in a skillet over medium heat.
  5. Add cooked ground beef to the sheet pan.
  6. Roast in the oven for 20-25 minutes until vegetables are tender.
