Description

A simple and delicious one-pan meal featuring garlic-Parmesan seasoned pork tenderloin roasted alongside your favorite vegetables. Perfect for a quick weeknight dinner.


Ingredients

  • 1.5 lb pork tenderloin
  • 2 tbsp olive oil
  • 4 cloves garlic, minced
  • 1/4 cup grated Parmesan cheese
  • 1 tsp dried Italian seasoning
  • Salt and black pepper to taste
  • 2 cups broccoli florets
  • 1 red bell pepper, chopped
  • 1 yellow bell pepper, chopped
  • 1 red onion, cut into wedges


Instructions

  1. Preheat your oven to 400°F (200°C).
  2. In a small bowl, mix together olive oil, minced garlic, Parmesan cheese, Italian seasoning, salt, and pepper.
  3. Place the pork tenderloin on a large baking sheet. Rub the garlic-Parmesan mixture all over the pork.
  4. Arrange the broccoli florets, bell peppers, and red onion around the pork on the baking sheet. Drizzle the vegetables with a little extra olive oil and season with salt and pepper.
  5. Roast for 20-25 minutes, or until the pork is cooked through and the vegetables are tender and slightly caramelized.
  6. Let the pork rest for 5 minutes before slicing. Serve the sliced pork with the roasted vegetables.
