Ingredients
- 1.5 lb pork tenderloin
- 2 tbsp olive oil
- 4 cloves garlic, minced
- 1/4 cup grated Parmesan cheese
- 1 tsp dried Italian seasoning
- Salt and black pepper to taste
- 2 cups broccoli florets
- 1 red bell pepper, chopped
- 1 yellow bell pepper, chopped
- 1 red onion, cut into wedges
Instructions
- Preheat your oven to 400°F (200°C).
- In a small bowl, mix together olive oil, minced garlic, Parmesan cheese, Italian seasoning, salt, and pepper.
- Place the pork tenderloin on a large baking sheet. Rub the garlic-Parmesan mixture all over the pork.
- Arrange the broccoli florets, bell peppers, and red onion around the pork on the baking sheet. Drizzle the vegetables with a little extra olive oil and season with salt and pepper.
- Roast for 20-25 minutes, or until the pork is cooked through and the vegetables are tender and slightly caramelized.
- Let the pork rest for 5 minutes before slicing. Serve the sliced pork with the roasted vegetables.

- You can substitute other vegetables like Brussels sprouts, zucchini, or cherry tomatoes.
- For a spicier kick, add a pinch of red pepper flakes to the garlic-Parmesan mixture.
