Description

Easy sheet pan meal with tender steak bites and crispy potatoes coated in garlic butter. Perfect for a quick and delicious weeknight dinner.


Ingredients

  • 1.5 lbs sirloin steak, cut into 1-inch cubes
  • 1.5 lbs baby potatoes, halved or quartered
  • 4 tablespoons unsalted butter, melted
  • 4 cloves garlic, minced
  • 1 teaspoon dried rosemary
  • 1 teaspoon dried thyme
  • Salt, to taste
  • Black pepper, to taste
  • Optional: fresh parsley, chopped, for garnish


Instructions

  1. Preheat your oven to 400°F (200°C).
  2. In a large bowl, toss the potatoes with 2 tablespoons of melted butter, half of the minced garlic, rosemary, thyme, salt, and pepper.
  3. Spread the seasoned potatoes in a single layer on a large baking sheet.
  4. Roast the potatoes for 20 minutes.
  5. While the potatoes are roasting, in the same bowl (no need to wash), toss the steak bites with the remaining 2 tablespoons of melted butter, the rest of the minced garlic, salt, and pepper.
  6. After 20 minutes, remove the baking sheet from the oven. Add the seasoned steak bites to the baking sheet with the potatoes, ensuring everything is in a single layer.
  7. Return the baking sheet to the oven and bake for another 10-12 minutes, or until the steak is cooked to your desired doneness and the potatoes are tender and browned.
  8. Garnish with fresh parsley if desired before serving.

Notes

  • For crispier potatoes, ensure they are cut into similar-sized pieces and are not overcrowded on the baking sheet.
  • Adjust cooking time for steak based on your preferred level of doneness.
  • You can substitute other cuts of steak like ribeye or New York strip.
