Easy sheet pan meal with tender steak bites and crispy potatoes coated in garlic butter. Perfect for a quick and delicious weeknight dinner.
Ingredients
- 1.5 lbs sirloin steak, cut into 1-inch cubes
- 1.5 lbs baby potatoes, halved or quartered
- 4 tablespoons unsalted butter, melted
- 4 cloves garlic, minced
- 1 teaspoon dried rosemary
- 1 teaspoon dried thyme
- Salt, to taste
- Black pepper, to taste
- Optional: fresh parsley, chopped, for garnish
Instructions
- Preheat your oven to 400°F (200°C).
- In a large bowl, toss the potatoes with 2 tablespoons of melted butter, half of the minced garlic, rosemary, thyme, salt, and pepper.
- Spread the seasoned potatoes in a single layer on a large baking sheet.
- Roast the potatoes for 20 minutes.
- While the potatoes are roasting, in the same bowl (no need to wash), toss the steak bites with the remaining 2 tablespoons of melted butter, the rest of the minced garlic, salt, and pepper.
- After 20 minutes, remove the baking sheet from the oven. Add the seasoned steak bites to the baking sheet with the potatoes, ensuring everything is in a single layer.
- Return the baking sheet to the oven and bake for another 10-12 minutes, or until the steak is cooked to your desired doneness and the potatoes are tender and browned.
- Garnish with fresh parsley if desired before serving.
Notes
- For crispier potatoes, ensure they are cut into similar-sized pieces and are not overcrowded on the baking sheet.
- Adjust cooking time for steak based on your preferred level of doneness.
- You can substitute other cuts of steak like ribeye or New York strip.
