Ingredients

  • 1.5 lbs boneless, skinless chicken thighs, cut into 1-inch pieces
  • 2 medium zucchinis, cut into 1/2-inch thick half-moons
  • 3 tablespoons olive oil
  • 4 cloves garlic, minced
  • 2 tablespoons unsalted butter, melted
  • 1 teaspoon dried oregano
  • 1/2 teaspoon dried thyme
  • Salt, to taste
  • Black pepper, to taste
  • 1/4 cup chopped fresh parsley, for garnish


Instructions

  1. Preheat your oven to 400°F (200°C).
  2. In a large bowl, toss the chicken pieces and zucchini with olive oil, minced garlic, melted butter, oregano, thyme, salt, and pepper.
