Description
A simple and delicious sheet pan meal featuring seasoned chicken and broccoli tossed in a flavorful garlic butter sauce, all cooked on a single baking sheet for easy cleanup.
Ingredients
- 1.5 lbs boneless, skinless chicken thighs or breasts, cut into 1-inch pieces
- 1 lb broccoli florets
- 3 tablespoons olive oil
- 1 teaspoon salt
- 0.5 teaspoon black pepper
- 0.5 teaspoon paprika
- 4 cloves garlic, minced
- 4 tablespoons unsalted butter
- 1 tablespoon fresh lemon juice
- 1 tablespoon chopped fresh parsley (for garnish, optional)
Instructions
- Preheat your oven to 400°F (200°C).
- In a large bowl, toss the chicken pieces with 1.5 tablespoons of olive oil, salt, pepper, and paprika.
- Spread the seasoned chicken in a single layer on one side of a large baking sheet.
- In the same bowl (no need to wash), toss the broccoli florets with the remaining 1.5 tablespoons of olive oil and a pinch of salt and pepper.
- Spread the seasoned broccoli in a single layer on the other side of the baking sheet next to the chicken.
- Bake for 15 minutes.
- While the chicken and broccoli are baking, melt the butter in a small saucepan over medium heat. Add the minced garlic and cook for 1-2 minutes until fragrant, being careful not to burn it. Stir in the lemon juice.
- After 15 minutes, remove the baking sheet from the oven. Drizzle the garlic butter mixture over the chicken and broccoli. Toss gently to coat everything evenly.
- Return the baking sheet to the oven and bake for another 10-15 minutes, or until the chicken is cooked through and the broccoli is tender-crisp.
- Garnish with fresh parsley, if desired, before serving.
Notes
- For crispier broccoli, you can broil for the last 1-2 minutes of cooking, watching carefully to prevent burning.
- Adjust the amount of garlic to your preference.
- Feel free to add other vegetables like bell peppers or onions.
