Description

A simple and delicious sheet pan meal featuring seasoned chicken and broccoli tossed in a flavorful garlic butter sauce, all cooked on a single baking sheet for easy cleanup.


Ingredients

  • 1.5 lbs boneless, skinless chicken thighs or breasts, cut into 1-inch pieces
  • 1 lb broccoli florets
  • 3 tablespoons olive oil
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 0.5 teaspoon paprika
  • 4 cloves garlic, minced
  • 4 tablespoons unsalted butter
  • 1 tablespoon fresh lemon juice
  • 1 tablespoon chopped fresh parsley (for garnish, optional)


Instructions

  1. Preheat your oven to 400°F (200°C).
  2. In a large bowl, toss the chicken pieces with 1.5 tablespoons of olive oil, salt, pepper, and paprika.
  3. Spread the seasoned chicken in a single layer on one side of a large baking sheet.
  4. In the same bowl (no need to wash), toss the broccoli florets with the remaining 1.5 tablespoons of olive oil and a pinch of salt and pepper.
  5. Spread the seasoned broccoli in a single layer on the other side of the baking sheet next to the chicken.
  6. Bake for 15 minutes.
  7. While the chicken and broccoli are baking, melt the butter in a small saucepan over medium heat. Add the minced garlic and cook for 1-2 minutes until fragrant, being careful not to burn it. Stir in the lemon juice.
  8. After 15 minutes, remove the baking sheet from the oven. Drizzle the garlic butter mixture over the chicken and broccoli. Toss gently to coat everything evenly.
  9. Return the baking sheet to the oven and bake for another 10-15 minutes, or until the chicken is cooked through and the broccoli is tender-crisp.
  10. Garnish with fresh parsley, if desired, before serving.

Notes

  • For crispier broccoli, you can broil for the last 1-2 minutes of cooking, watching carefully to prevent burning.
  • Adjust the amount of garlic to your preference.
