Description

A simple and delicious sheet pan meal featuring balsamic chicken and Brussels sprouts, perfect for a quick weeknight dinner.


Ingredients

  • 1.5 lbs boneless, skinless chicken thighs, cut into 1-inch pieces
  • 1 lb Brussels sprouts, trimmed and halved
  • 2 tablespoons olive oil
  • 3 tablespoons balsamic glaze
  • 1 teaspoon dried oregano
  • 1/2 teaspoon garlic powder
  • Salt and black pepper to taste


Instructions

  1. Preheat your oven to 400°F (200°C).
  2. In a large bowl, toss the chicken pieces and Brussels sprouts with olive oil, oregano, garlic powder, salt, and pepper.
  3. Spread the chicken and Brussels sprouts in a single layer on a large baking sheet.
  4. Roast for 20-25 minutes, or until the chicken is cooked through and the Brussels sprouts are tender and slightly caramelized.
  5. Drizzle with balsamic glaze before serving.

Notes

  • For extra flavor, you can add a pinch of red pepper flakes to the seasoning mixture.
  • If you don’t have balsamic glaze, you can reduce balsamic vinegar in a small saucepan until thickened.
