Description

A quick and easy sausage and veggie skillet for a simple weeknight dinner.


Ingredients

  • 1 pound Italian sausage, sliced
  • 1 red bell pepper, chopped
  • 1 green bell pepper, chopped
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 zucchini, chopped
  • 1 yellow squash, chopped
  • 1 (14.5 ounce) can diced tomatoes, undrained
  • 1 teaspoon Italian seasoning
  • Salt and pepper to taste


Instructions

  1. Heat a large skillet over medium-high heat.
  2. Add the sausage and cook until browned.
  3. Add the bell peppers and onion and cook until softened.
  4. Add the garlic, zucchini, and yellow squash and cook until tender.
  5. Stir in the diced tomatoes and Italian seasoning.
  6. Season with salt and pepper to taste.
  7. Bring to a simmer and cook for 10 minutes, or until heated through.

Notes

  • Use any combination of vegetables you like.
  • Serve over rice, pasta, or quinoa.
  • Add a sprinkle of Parmesan cheese before serving.
