Description
A quick and easy sausage and veggie skillet for a simple weeknight dinner.
Ingredients
- 1 pound Italian sausage, sliced
- 1 red bell pepper, chopped
- 1 green bell pepper, chopped
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 zucchini, chopped
- 1 yellow squash, chopped
- 1 (14.5 ounce) can diced tomatoes, undrained
- 1 teaspoon Italian seasoning
- Salt and pepper to taste
Instructions
- Heat a large skillet over medium-high heat.
- Add the sausage and cook until browned.
- Add the bell peppers and onion and cook until softened.
- Add the garlic, zucchini, and yellow squash and cook until tender.
- Stir in the diced tomatoes and Italian seasoning.
- Season with salt and pepper to taste.
- Bring to a simmer and cook for 10 minutes, or until heated through.
Notes
- Use any combination of vegetables you like.
- Serve over rice, pasta, or quinoa.
- Add a sprinkle of Parmesan cheese before serving.
