Description

A simple and healthy sheet pan meal featuring salmon roasted with earthy beets and sweet carrots, finished with fresh dill.


Ingredients

  • 1 lb salmon fillet
  • 2 medium beets, peeled and diced
  • 2 medium carrots, peeled and sliced
  • 2 tablespoons olive oil
  • 1 tablespoon fresh dill, chopped
  • Salt and pepper to taste


Instructions

  1. Preheat your oven to 400°F (200°C).
  2. On a large baking sheet, toss the diced beets and sliced carrots with olive oil, salt, and pepper.
  3. Roast the vegetables for 20 minutes.
  4. Add the salmon fillet to the baking sheet, seasoning it with salt and pepper.
  5. Roast for another 12-15 minutes, or until the salmon is cooked through and flakes easily with a fork.
  6. Garnish with fresh dill before serving.
