Description

A simple and flavorful recipe for chicken thighs braised in apple cider with rosemary and garlic. This dish offers warm, comforting fall flavors perfect for a weeknight dinner.


Ingredients

  • 1.5 lbs boneless, skinless chicken thighs
  • 1 tablespoon olive oil
  • 1 medium onion, sliced
  • 3 cloves garlic, minced
  • 1 cup apple cider
  • 1 tablespoon fresh rosemary, chopped
  • Salt and black pepper to taste


Instructions

  1. Preheat oven to 375°F (190°C).
  2. Season chicken thighs with salt and pepper.
  3. Heat olive oil in an oven-safe skillet over medium-high heat. Sear chicken thighs until golden brown on both sides. Remove chicken from skillet and set aside.
  4. Add sliced onion to the skillet and cook until softened, about 5 minutes.
  5. Add minced garlic and cook for 1 minute until fragrant.
  6. Pour in apple cider and scrape up any browned bits from the bottom of the skillet.
  7. Return chicken thighs to the skillet. Sprinkle with chopped rosemary.
  8. Bring the liquid to a simmer, then cover the skillet.
  9. Transfer the skillet to the preheated oven and bake for 25-30 minutes, or until chicken is cooked through.
  10. Serve hot.

Notes

  • You can substitute chicken breasts for thighs, but adjust cooking time as needed.
  • Fresh thyme can be used as an alternative to rosemary.
  • For a thicker sauce, reduce the liquid uncovered in the last 5-10 minutes of baking.
