Description
A simple and flavorful recipe for chicken thighs braised in apple cider with rosemary and garlic. This dish offers warm, comforting fall flavors perfect for a weeknight dinner.
Ingredients
- 1.5 lbs boneless, skinless chicken thighs
- 1 tablespoon olive oil
- 1 medium onion, sliced
- 3 cloves garlic, minced
- 1 cup apple cider
- 1 tablespoon fresh rosemary, chopped
- Salt and black pepper to taste
Instructions
- Preheat oven to 375°F (190°C).
- Season chicken thighs with salt and pepper.
- Heat olive oil in an oven-safe skillet over medium-high heat. Sear chicken thighs until golden brown on both sides. Remove chicken from skillet and set aside.
- Add sliced onion to the skillet and cook until softened, about 5 minutes.
- Add minced garlic and cook for 1 minute until fragrant.
- Pour in apple cider and scrape up any browned bits from the bottom of the skillet.
- Return chicken thighs to the skillet. Sprinkle with chopped rosemary.
- Bring the liquid to a simmer, then cover the skillet.
- Transfer the skillet to the preheated oven and bake for 25-30 minutes, or until chicken is cooked through.
- Serve hot.
Notes
- You can substitute chicken breasts for thighs, but adjust cooking time as needed.
- Fresh thyme can be used as an alternative to rosemary.
- For a thicker sauce, reduce the liquid uncovered in the last 5-10 minutes of baking.
