Ingredients
- 1 pound pasta
- 1 red bell pepper, chopped
- 1 yellow bell pepper, chopped
- 1 zucchini, chopped
- 1 onion, chopped
- 2 cloves garlic, minced
- 2 tablespoons olive oil
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1 cup heavy cream
- 1/2 cup grated Parmesan cheese
- Fresh basil, for garnish
Instructions
- Preheat oven to 400°F (200°C).
- Toss bell peppers, zucchini, onion, and garlic with olive oil, salt, and pepper.
- Roast vegetables for 20-25 minutes, or until tender.
- Cook pasta according to package directions.
- In a large skillet, combine roasted vegetables and heavy cream.
- Bring to a simmer and cook for 5 minutes.
- Stir in Parmesan cheese until melted and smooth.
