Ingredients

  • 1 pound pasta
  • 1 red bell pepper, chopped
  • 1 yellow bell pepper, chopped
  • 1 zucchini, chopped
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 2 tablespoons olive oil
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 cup heavy cream
  • 1/2 cup grated Parmesan cheese
  • Fresh basil, for garnish


Instructions

  1. Preheat oven to 400°F (200°C).
  2. Toss bell peppers, zucchini, onion, and garlic with olive oil, salt, and pepper.
  3. Roast vegetables for 20-25 minutes, or until tender.
