Ingredients
- 1 pound pasta
- 2 cups roasted corn kernels
- 1 red bell pepper, diced
- 1/2 cup red onion, diced
- 1/4 cup fresh cilantro, chopped
- 1/2 cup mayonnaise
- 1/4 cup sour cream
- 2 tablespoons lime juice
- 1 teaspoon chili powder
- Salt and pepper to taste
Instructions
- Cook pasta according to package directions. Drain and cool.
- In a large bowl, combine cooled pasta, roasted corn, red bell pepper, red onion, and cilantro.
- In a separate small bowl, whisk together mayonnaise, sour cream, lime juice, chili powder, salt, and pepper.
- Pour dressing over pasta mixture and toss gently to combine.
