Description

Ingredients

  • 1 pound pasta
  • 2 cups roasted corn kernels
  • 1 red bell pepper, diced
  • 1/2 cup red onion, diced
  • 1/4 cup fresh cilantro, chopped
  • 1/2 cup mayonnaise
  • 1/4 cup sour cream
  • 2 tablespoons lime juice
  • 1 teaspoon chili powder
  • Salt and pepper to taste


Instructions

  1. Cook pasta according to package directions. Drain and cool.
  2. In a large bowl, combine cooled pasta, roasted corn, red bell pepper, red onion, and cilantro.
  3. In a separate small bowl, whisk together mayonnaise, sour cream, lime juice, chili powder, salt, and pepper.
