Simple and flavorful roasted cherry tomato toasts. Perfect as an appetizer or light meal.
Ingredients
- 1 pint cherry tomatoes
- 2 cloves garlic, minced
- 2 tablespoons olive oil
- Salt and pepper to taste
- 1 baguette, sliced
- 4 ounces goat cheese
- Fresh basil leaves for garnish
Instructions
- Preheat oven to 400°F (200°C).
- In a bowl, toss cherry tomatoes with garlic, olive oil, salt, and pepper.
- Spread tomatoes in a single layer on a baking sheet.
- Roast for 20-25 minutes, or until tomatoes are softened and slightly burst.
- While tomatoes are roasting, toast baguette slices.
- Spread goat cheese on each toast.
- Top with roasted cherry tomatoes.
- Garnish with fresh basil leaves.
- Serve immediately.
