A quick and refreshing cold noodle dish perfect for summer. This easy recipe features Asian-inspired flavors and is ideal for a light meal.
Ingredients
- 200g dried noodles (e.g., ramen, soba, or rice noodles)
- 2 tablespoons soy sauce
- 1 tablespoon rice vinegar
- 1 teaspoon sesame oil
- 1 teaspoon sugar
- 1/2 teaspoon chili flakes (optional)
- 1 clove garlic, minced
- 1 inch ginger, grated
- 1/4 cup chopped scallions
- 1/4 cup chopped cilantro
- 1/4 cup shredded cucumber
- 1/4 cup shredded carrot
- Optional toppings: cooked chicken, shrimp, tofu, peanuts
Instructions
- Cook noodles according to package directions. Rinse under cold water and drain well.
- In a small bowl, whisk together soy sauce, rice vinegar, sesame oil, sugar, chili flakes (if using), minced garlic, and grated ginger.
- In a large bowl, combine the drained noodles with the dressing. Toss to coat evenly.
- Add chopped scallions, cilantro, shredded cucumber, and shredded carrot. Toss again.
- Serve immediately with your choice of optional toppings.

- Adjust chili flakes to your spice preference.
- You can add a squeeze of lime juice for extra freshness.
