Ingredients

  • 200g dried noodles (e.g., ramen, soba, or rice noodles)
  • 2 tablespoons soy sauce
  • 1 tablespoon rice vinegar
  • 1 teaspoon sesame oil
  • 1 teaspoon sugar
  • 1/2 teaspoon chili flakes (optional)
  • 1 clove garlic, minced
  • 1 inch ginger, grated
  • 1/4 cup chopped scallions
  • 1/4 cup chopped cilantro
  • 1/4 cup shredded cucumber
  • 1/4 cup shredded carrot
  • Optional toppings: cooked chicken, shrimp, tofu, peanuts


Instructions

  1. Cook noodles according to package directions. Rinse under cold water and drain well.
  2. In a small bowl, whisk together soy sauce, rice vinegar, sesame oil, sugar, chili flakes (if using), minced garlic, and grated ginger.
  3. In a large bowl, combine the drained noodles with the dressing. Toss to coat evenly.
  4. Add chopped scallions, cilantro, shredded cucumber, and shredded carrot. Toss again.
